Italian Mushroom Soup
This mushroom soup recipe has subtle savory notes from porcinis and creminis and a hint of richness from heavy cream.
Ingredients
Makes 6-8 servings
• 1 ½ cups dried porcini mushrooms (about 1 ⁄ 2 ounce)
• 1 cup boiling water
• 1 tablespoon olive oil
• 2 cups chopped onions
• 8 ounces sliced cremini mushrooms, plus additional for garnish
• 2 cloves garlic, minced
• ¼ teaspoon dried thyme
• 1/4 cup all-purpose flour
• 4 cup vegetable broth
• 1/2 cup heavy cream
• 1/3 cup Masala wine (optional)

1. Place dried mushrooms in small bowl; pour boiling water over mushrooms. Let stand 15 minutes or until soft.
2. Meanwhile, heat olive oil in large saucepan over medium heat. Add onions; cook 5 minutes or until translucent, stirring occasionally. Add 8 ounces cremini mushrooms, garlic and thyme; cook 8 minutes, stirring occasionally.
3. Stir in flour until blended; cook 1 minute, stirring constantly. Stir in broth and porcini mushrooms with soaking water. Bring to a boil. Reduce heat to medium-low; simmer 10 minutes.
4. Transfer soup to pitcher of KitchenAid ® Magnetic Drive Blender. Cover and blend on Soups/Sauces setting. Return to saucepan; stir in cream and wine, if desired. Cook over medium-low heat until heated through.
5. Season with salt and pepper. Garnish with additional cremini mushrooms.

Choco-tini
This sweet and velvety chocolate martini recipe includes chocolate syrup, almond extract and cream of coconut.
Ingredients
Makes 4 servings
• 3 cups ice
• 1 cup cream of coconut
• ½ cup chocolate syrup
• 4 ounces vodka
• ½ teaspoon almond extract
• Fresh raspberries (optional)
Instructions
1. Place ice, cream of coconut, milk, chocolate syrup, vodka and almond extract in pitcher of KitchenAid ® Magnetic Drive Blender. Cover and blend on Icy Drinks/Smoothies setting.
2. Pour into four glasses; garnish with raspberries. Serve immediately.

Banana Pineapple Breakfast Shake
This frosty pineapple smoothie recipe has surprising depth of flavor thanks to nutmeg and vanilla.
Ingredients
Makes 4 servings

• 2 cups plain yogurt
• 1 can crushed pineapple in juice (8 ounces)
• 1 banana
• 1 cup ice
• 2 tablespoons sugar
• 1 teaspoon vanilla
• 1/8 teaspoon ground nutmeg

Instructions
Place yogurt, pineapple, banana, ice, sugar, vanilla and nutmeg in pitcher of KitchenAid ® Blender. Cover and blend on Icy Drinks/Smoothies setting.
Pour into four glasses; serve immediately.
