Green Tea Macarons to Celebrate Nutritionist Day

Did you know that today is Nutritionist Day? The profession emerged many years ago, historically born from the need to review food quality during World War II. Even though soldiers seemed to be in optimal health, the food they consumed did not provide them with necessary nutritional benefits which made them prone to suffer grave illnesses. To improve soldier’s quality of life, the urgency to learn about nutrition and improving lifestyle choices became known.
In Latin America, this day is celebrated to commemorate the birth of Dr. Pedro Escudero, an Argentinian doctor considered “The Father of Nutrition” in Latin America.
Why is it important to consult a nutritionist? Different bodies require different nutrients, vitamins, and minerals in different proportions. “The idea is not to limit all foods, but to know what your body really needs so it can optimally perform all its vital functions. The important thing is to have a balanced diet, eat real food, and avoid processed products and refined sugars,” mentioned María Calle, a KitchenAid nutritionist. “For this reason, it’s very important to first consult with a nutritionist before starting any nutritional plan or schedule so we can advise you in accordance to your specific needs and lifestyle.”

Green Tea Macarons

Makes: 30 sandwiched cookies
Portion Size: 2 pieces
Prep Time: 30 min.
Bake Time: 8 min.
Ingredients:
· 2 cups powdered sugar, sifted
· 1 cup almond flour
· 2 teaspoons matcha green tea powder, sifted
· 3 egg whites
· 1 tablespoon granulated sugar, sifted
Filling:
· ¾ cup ready-to-use cream cheese icing
· 1 teaspoon matcha green tea powder
Method of Preparation
1. Preheat oven to 400°F (or 375°F for convection oven). Combine powdered sugar, almond flour and 2 teaspoons green tea powder in medium bowl; set aside.
2. Add egg whites and granulated sugar to bowl of KitchenAid® Artisan Mini Stand Mixer. Attach bowl and Wire Whip to mixer. Gradually turn to Speed 10 and whip until egg whites form stiff peaks. Remove Wire Whip and replace with Flat Beater. Add almond mixture. Turn to Speed 1 and mix until combined.
3. Transfer mixture to piping bag fitted with medium round tip. Line baking sheets with parchment paper or silicone mats. Pipe batter onto sheets in ½-inch-diameter circles, 1-inch apart. Batter should yield about 60 cookies. Let stand 10 minutes before baking.
4. Bake 8 to 10 minutes or until crisp and lightly browned. Cool completely on wire rack.
To Make Filling:
1. Add icing and 1 teaspoon green tea powder to mixer bowl. Attach bowl and Flat Beater to mixer. Turn to Speed 2 and mix 2 minutes or until well blended.
2. Assemble macarons using about 1 teaspoon filling for each cookie sandwich. Press together gently.
Chef’s Tips
· To make other flavor variations, prepare cookies as directed, omitting green tea powder. Fill with citrus curd, chocolate ganache, or your favorite fruit preserves.
