When it comes to avocado toast, the best slices go well beyond two ingredients. If you require further proof, let us present this caprese avocado toast. All the components of a caprese salad — from the ripe tomatoes and the creamy mozzarella to the fresh basil and the tangy balsamic glaze — are a good friend to the cool avocado. If there was ever an example of when the whole is better than the sum of its parts (and we’re talking about irresistible parts!), caprese avocado toast nails it on the head.
Bite-Sized Toppings Make a Better Toast
While fat, round tomatoes and thick slices of mozzarella are the stars of caprese salad, think smaller when it comes to avocado toast. Stick with bite-sized ingredients, like grape or cherry tomatoes and pearl-sized balls of mozzarella.
Serves 2
2 slices hearty sandwich bread, such as peasant bread, sourdough, whole-wheat or multi-grain
1 medium avocado, halved and pit removed
8 grape tomatoes, halved
2 ounces fresh ciliegine or bite-sized mozzarella balls (about 12)
4 large fresh basil leaves, torn
2 tablespoons balsamic glaze
Toast the bread. While the bread is toasting, mash the avocado in a small bowl.
Spread the mashed avocado over the toast. Top each slice with tomatoes, mozzarella balls, and basil leaves, then drizzle with balsamic glaze. Serve immediately.
